"As time goes by, you will notice a jellylike substance forming a scum on the surface of the vinegar. No, your vinegar is not spoiling. This is the "mother," and without it there would be no vinegar. Mother is made up of cellulose and the bacteria necessary for vinegar production. Mother does not like to be disturbed; movement retards vinegar production and a fallen mother will lower the quality of the vinegar."
